The shape of the Paris-Brest is also supposed to represent a bicycle wheel in reference to the cycle race. A century and not a wrinkle for this dessert, still so famous, and adored by praline gourmands... Recipes made: production choux pastry, mousseline cream with praline. Demonstration of making homemade praline. Class limited to 5 people. Mask required during class.
