Recipes made: choux pastry, caramel, vanilla cream, whipped cream, assembly of Saint Honoré.
Course objectives:
learn how to make regular choux buns using a piping bag,
make a pastry cream,
garnish the cabbages,
make a caramel and control its cooking,
caramelize the cabbages,
whip up a whipped cream
make the decoration with the saint-honoré socket.
