It was a pastry chef from Maisons Laffitte (78), Louis Durand, inspired by the Paris-Brest-Paris cycling race created in 1891, who created the cake in 1910.

The shape of the Paris-Brest is also supposed to represent a bicycle wheel in reference to the cycle race. A century and not a day for this dessert, still so famous, and adored by praline gourmands...

 

Recipes made: making choux pastry, praline mousseline cream, demonstration of making homemade praline.

 

Techniques taught: making choux pastry (recipes for chouquettes, éclairs, nuns, St Honoré, mounted pieces, etc.), praline pastry cream, Paris-Brest assembly technique and decoration, demonstration of choux Paris- Brest, manufacturing and cooking of homemade praline.

 

Course limited to 7 people.

Wearing a mask is mandatory during class.
