Saturday October 28, 2023: Millefeuille and puff pastry (4 hours)
4 hour course
Hours: 9 a.m. - 1 p.m.
“Tonight I’m bringing dessert!” A true symbol of French pastry, learn how to make this gourmet dessert to impress your loved ones!
Made of three layers of puff pastry and two layers of pastry cream, the top is glazed with icing sugar or fondant. You can add jam or fruit. It would have been created by François Pierre de La Varenne, who described it in his “Cuisinier françois” in 1651. It would then have been perfected by Marie-Antoine Carême, cook of Charles-Maurice de Talleyrand-Périgord.
However, many professional pastry chefs only date it back to 1867, where it was offered as a specialty by the famous pastry chef Adolphe Seugnot, then based at 28, rue du Bac in Paris. The French name of this pastry refers to the large number of sheets of dough that make up each cake.
Recipes made: making puff pastry, filling, vanilla pastry cream, assembly and decoration of the Millefeuille.
The “extras” of the workshop: You will make your own puff pastry. You leave with your dessert and a piece of puff pastry ready to use.
Workshop limited to 6 people.
