You know them, you have certainly already tasted them, now you are going to make them!
Lemon, pear, mango and the new kid: coconut!
These trompe-l'oeil fruits are visually astonishing and divinely delicious!
Recipes made: Coconut (coconut whipped ganache, rum baba and exotic fruit confit, milk chocolate coating), Lemon (lime cream cheese mousse and 3 lemon and black lemon insert), Pear (pear mousse and vanilla pear insert), Mango (mango/passion fruit and lime mousse, mango/passion fruit insert, hazelnut biscuit).
Techniques taught during the course: making a fruit mousse, a bombard paste, making inserts based on fruit preserves and infusions, fruit coating technique and mirror glazing or flocking (depending on the fruit).
